You can can dial in your own roast level, but we recommend keeping the final roasted beans in the range of Medium to Full City, as opposed to Vienna or darker, to retain the Kona flavor characteristics. Final roasted 100% Kona coffee beans should deliver a brew that is complex, yet balanced, with moderate acidity.
